You know what I love about November?
To me, it feels like the entrée into a season of celebrating the loved ones in our life.
The energy is everywhere:
🛒 The grocery store, as more and more people plan for upcoming feasts.
🌐 The internet, as every publication turns their content towards hosting families and friends.
🧦 Even the sweater-weather and seasonal darkness seem to signal that it’s time to cuddle up into a warm hug and hibernate together.
👵🏽 Sensing our grounding needs, Momma Nature unveils her fall line-up of root veggies, squashes, and dark leafy greens.
And her matriarchal menu change is a reminder of how easy she makes it for us to constantly and consistently eat new foods, in-tune with the seasons, that provide the healthiest experience for our bodies.
And, to celebrate Momma Nature, and her seasonal superfoods, why not try some new ones this month?
With that in mind, welcome to our new series, Effie Eats!
As I’ve been upleveling my own wellness journey, I’ve been learning about the importance of eating a variety of fresh foods. And one of the easiest (and funnest) ways to do this is to eat seasonally.
So, committed to this journey, one day, when I was at the grocery store, instead of stocking up on organic sweet potatoes––a staple in my cupboard––I decided to try out honeynut squash.
And I’m so glad I did.
So, the first thing you should know about Honeynut squash is that it taste like it’s been naturally infused with honey. I’m not kidding. They taste like candy.
Turns out they’re also providing you with high levels of beta carotene, fiber, manganese, magnesium, and more!
So, in this first video short episode of Effie Eats, Effie talks about the health benefits of Honeynut squash (and as she’s talking, that’s me making it:).
These are my new faves, and, if I can find them (seems like they are out of stock everywhere😩), they’ll definitely be on my Thanksgiving menu.

If you want to try them out, here’s my super simple recipe:
🍯HONEYNUT SQUASH SQUARES🍯
Ingredients:
~ Honeynut Squash (one squash serves one adult)
~ Salt to taste
~ Pepper to taste
~ Dash of Cayenne Pepper
Preparation:
~ Preheat oven to 400 degrees
~ Cut squash into small squares (spooning away seeds)
~ Cover a baking sheet with parchment paper and about 2 tablespoons olive oil
~ Season the BAKING SHEET with a bit of salt, a bit of pepper, and a slight dash of cayenne pepper
~ Rub the honeynut squash in the seasoned baking sheet, lightly coating every honeynut square
~ Cook at 400 for 30-40 minutes (until some brown around the edges–you want a few to be crispy)
~ Enjoy!
Again, one squash serves one adult, so use that to gauge how many to cook for your family.
